Air Fryer Chicken Pizza

Ingredients:

  • 1 large boneless skinless chicken breast
  • garlic powder, to taste
  • dried Italian seasoning, to taste
  • ground pepper, to taste
  • pizza sauce
  • shredded mozzarella cheese
  • sliced pepperoni
  • a spray or two olive oil

Directions:

1. Using a sharp knife, butterfly the chicken breast and lay it open like a book.
2. Slide the opened chicken breast into a gallon-sized Ziploc bag and zip the bag closed. Pound the chicken breast on both sides of the Ziploc bag until chicken is round and flattened a little with a meat mallet until about 3/4 inch thick. Your flattened chicken should resemble a nice little round pizza crust by now. (It doesn’t have to be a perfectly round shape, though.)
3. Line your air fryer pan with a parchment round. Remove chicken from the Ziploc bag and lay the opened, flattened chicken breast on the parchment. Spritz with one or two quick sprays of olive oil and rub the oil across the top of the chicken. Add a few shakes each (to taste) of the garlic powder, dried Italian seasoning, and the pepper.
4. Place pan in air fryer and cook at 356 degrees for 8 minutes. Open air fryer and flip flattened chicken to the other side. Spray one or two sprays of olive oil on this side and spread the oil a little bit using the bottom of a spoon to keep from burning yourself. Place pan back inside air fryer and cook for another 8 minutes at 356 degrees.
5. When done, remove pan from air fryer and spoon desired amount of pizza sauce on top and spread it just as you would a pizza. Next, lay a good sized handful of Mozzarella cheese, and then place several pepperoni slices on top. Now you should have a beautiful personal sized pizza in front of you. Pierce each pepperoni with a toothpick to prevent them from coming off and flying around inside the air fryer. Return pan to air fryer and cook for 5 minutes at 250 degrees, just long enough to melt cheese and heat up the toppings.
6. With great anticipation, remove your Pizza Chicken from air fryer, remove toothpicks, and eat that delicious no-guilt “pizza” until your belly is full and thanking you for a job well done!
